Pickup the phone, call 0800 344 844 and ask Heathrow to send you some overflight maps (make sure they're 2019 and cover easterlies and westerlies) with areas you are looking to move too marked.
But I'll tell this for free. Your wife will never be satisfied living in the south east. She's already been triggered by aircraft noise and there is nowhere down here where you don't hear or see them, even if some areas are infrequent.
And did you know that 70% of aircraft noise annoyance is down to non-acoustic factors? So if she can see them, she'll likely be annoyed by them.

Coming in late to the a/c noise comments - I've "lived" (away with work for extended periods) and worked all over the country. Born and raised west London, then moved down to Chichester in my early 20s.
Somewhat supporting LHR - there's nowhere in the SE that's free from plane noise entirely. For me, due to my proximity to Goodwood, it's mainly light aircraft and spitfires. There's worse noises.
If it's a real issue for your wife, then I can't think that she'd be happy anywhere due south of London.
Me? I grew up with concorde flying overhead twice a day, at times we could count 10-15 planes in the "stack" for Heathrow. Along with road noise, it just got tuned out completely. Always amused me those that had moved to Hounslow/etc., and complained about the noise - or fought the necessary expansion that'd help keep the local economy growing and vibrant.
After 20 years down by the coast, I notice them a hell of a lot more - when I'm staying in Town though, it's again tuned out after the first day or two.

Hi, we live in Stoughton. Yes, it’s not as ‘posh’ as the other side of Guildford, but we don’t mind it!
You’d need another 300k or more to live the other side though.
Advantages are your near the A3, you can walk to town and the station if you want. As mentioned, avoid the estates further out, although to be honest they don’t seem that bad compared to ‘dodgy’ areas in other parts of the country!

You also probably need to familiarise yourself with the smaller airfields, off the top of my head; Blackbushe, Farnborough, Fairoaks, Dunsfold, Redhill, Biggin Hill.
Some of those are pretty busy, the planes are quite buzzy and will be lower (and helicopters).
Has your gf considered Hypnotherapy to overcome this? Might help.

Rather than asking about locations and aircraft noise, I’m sure some could suggest locations if you state budget and requirements (e.g. £380k, 2 beds, 1 hour to central London or whatever). It might throw up some areas you’d not considered.
I’d think you’d need to be north or east of London to avoid aircraft noise, although Luton airport is north... I grew up in Harpenden - when I was there I don’t recall ever hearing a plane, but now you do get the odd one (quite quiet) flying over depending on the route in/out of Luton airport.
ETA: I’d have thought Reading would be far enough out from Heathrow that plane noise wouldn’t be too bad. Same for Maidenhead, perhaps?

In my opinion Guildford is a lovely town. A lot of the roads you have mentioned are on Park Barn or Bellfields.
By estate standards, they are areas I would feel comfortable walking around after dark, but certainly the 'rougher' Park of town.
