I have a brass brake pipe connector that looks like this:




What fittings do I need to buy for this?

Should I buy 1 or 2?

Either so long as it's long enough to bottom out before you run out of threads. Note that there are 2 thread standards in use. Most modern cars are M10x1 but old British stuff is 3/8 and the two look very close but don't screw together at all.

If the hole is not tapped all the way down you may need the one with the lead in, if not either will be fine. If it is tapped right to the bottom the one threaded along it's full length will have more purchase and be less likely to strip if tightened to the point of utter gorilla like idiocy. In practical terms either is fine for the application in your picture.
