As the title suggests really.

I just noticed the stereo I am looking at says it has a built-in 4x55W amp, but the speakers I am looking at are 80W RMS. I have no idea what that means! haha.

They say 330W peak power. Am I right in assuming that is the most they can handle before the go pop?

You are correct, the stereo you have will supply 4 channels (front left, front right, rear left, rear right) with 55w each so your 80w speakers should be absolutely fine. Peak Power is like manufacturer's fuel economy figures so should be taken with a pinch of salt, RMS should be more accurate though.
