Sorry,I can't help.My shoes still have velcro and ratchets,I haven't learnt to do laces.

Youtube videos and zip ties on your frame. I wouldn't bother with a tension gauge, just flick the spokes and make sure they all make roughly the same note.

Same note on each side, hub offsets have to be accounted for...

Completely agree on that one. My current fat bike uses an offset 135mm rear end, so the wheel looks pretty asymmetric from above, as does the rear end.

For a dished wheel, the spokes on the same side make the same note. The other side makes another note. But on that side each spoke should be singing roughly the same as each other.
