Too much confirmation bias and not enough controlling of variables
True, to an extent, but I know I was having an absolute mare getting traction and controlling the front, and braking late enough, and maintaining momentum on the lesser bike, at much less output, than the Gucci rig. There’s only so much compensation for outlay you can reasonably account for.
A problem getting traction and controlling the front just means the cheaper bike isn't set up properly for you, the "cheaper" bike should perform pretty much similar in that regard.
I ride thousands of kms a year on a few different bikes ranging from cheap to mid-price and other than the time this photo was taken, I’ve never had problems getting traction or controlling the front end.

'budget' versions.... at £5.5k Not a lot of weight saving vs say a £4.75k Tarmac Expert. Pictures remind me of cheap Chinese frames!

I don’t want to be harsh but the wheels on the “base” model look pretty cheap for the money they’re charging...

Same, I have a cheap Felt road bike and an expensive Colnago. I'm certain that I couldn't tell any speed differences apart between them, due to fitness, weather, route etc. (Comfort, yes, the Colnago is tubeless and has a less harsh ride)

Also I just built up a 1x11 gravel bike with 40mm tyres and took it on my regular road route. I tried to ride at my normal effort and I was less than 10% slower than I'd have expected on my road bikes.

Each to their own. My best Road bike will be about 20% faster in average speed than my Gravel bike (also a 1x11). As said on a previous page, my Road Bikes have a lesser difference, under 5%.
