It can be as easy as that. If you don't want to mess around with the ride height just set the stops to the recommended height before fitting and leave it at that.
It would be a bit of a waste of the height adjustment available though.

If i'm going for the KYB / FM combo, will the handling be terrible without the FM ARBs or will the factory ones suffice?

Polybush the existing ARB's. You'll get a lot more communication from the ARB's - IME uprated (thicker) ARB's tend to be less fogiving and far snappier on the limit

No but you will get more body-roll unless you put the shocks on to a higher setting

I don't disagree except in this case the FM springs are designed to work with the FM ARBs. There is no snappiness at all with this setup.
