200m steel diver with black face and black bezel.
Solar rechargeable battery so no need to open case and compromise waterproofing for 10-15 years.
Date window at 3 o'clock with window pushed right to the edge for larger numbers and clarity or double digit date window (no need for a Cyclops)
Drilled lugs for easy strap/bracelet changing.
Rachet/"glidelock" mech. on bracelet.
Optional - Discreet GMT hand? with equally discreet 24 hour markers.
Too cheap? - get it made to Grand Seiko standards so it looks good under a 10x loupe; applied (white gold) raised minute markers (in addition to the applied hour markers).

Black dial with white markers, no numbers
Date window above 6 o'clock and below centre, no cyclops
GMT - Red or Orange hand
Uni directional bezel with black markers
Tritium tubes on markers and bezel
Kinda hard without being able to draw it and measure case depths etc to know what I like...

Having gone down this route for real then my advice is once you've made your perfect watch and it's sitting there happily on your wrist take a good hard look at it and ask yourself, 'am I happier with this or would I prefer a Mercedes SLS outside in the car park?' That really is the choice. Needless to say although I've built my ideal watch (and am supremely happy with it) outside in the car park is an 18 year old Merc SL with a dodgy roof mechanism.
