I suspect that would drive up R&D costs considerably. For a start-up, being able to source a decent quality leather strap (even made to their design/colour choice) of a known lug width creates huge early-cycle savings (well, cost avoidance). Consider the extra effort and cost associated with the development of end links, bracelet and clasp design and finding a manufacturer that can do this on their behalf...
I, for one, prefer straps for a chronograph. So much so that I have a few different ones for my chrono watches. And a pilot chronograph was traditionally presented on a leather strap.
