4 days in and the watch is currently gaining around 4 seconds per day fast.

The UTC hand can be set independantly of the hour hand, once set it will move at the same speed as the hour hand to illustrate a desired time zone (ie, one turn per 24hrs). Should you want to hide the UTC hand you can set it to hide under the hour hand and it will stay there until required.

Display back - perhaps not the correct term. Is the back of the 656S made of glass, allowing you to see the movement inside?

Thanks for the UTC explanation. Looking at the photo above, the hour hand is pointing to 10 o'clock and the UTC hand is pointing to 8 on the small dial. After three hours, the hour hand will obviously be pointing to 1 o'clock, will the UTC hand be pointing to 14 on the small dial?

Sorry for the late reply Debaser, all the above is correct tho so thanks to everyone else! No display back on the 856 either.
