Inverness and the Highlands

We're off to Inverness for a few days over the New Year - weather/roads permitting, we were thinking of heading North and/or West(ish) for the day to get out to one of the coastal areas.
Firstly is there anything that's a must do while we're in & around the city, and what would be the best routes out to get to the famous unspoilt empty beaches.

Book your meals. Many of the restaurants get full so if there's a particular one you fancy eating in, get your booking in.For drinks, hit the Malt Room. For mega doughnuts, Perk. Cafe di Paulo is getting a good rep for brekkie.
A little bit further out of town, loads of distlleries to visit if that interests you.
My preferred route out to the likes of Clachtoll and Achmelvich is A9 north then B9176, A836, A837.

Fort George?
Dolphins at Chanonry Point? (about 30mins drive North but good to do a loop taking in Rosemarkie and Cromarty.
Culloden Battle Field?
A drive around Loch Ness is pretty good too.

The Mustard Seed Restaurant is very nice and reasonably priced.

used to live in Nairn - head out that way for miles of sandy beaches, easy parking, and theres now a new cafe near the waterfront, although the small one near the harbour does better coffee and cake, if its still open.
head to findhorn for a traditional sea village again with piles of sandy beaches , great cafe there The Bakehouse Cafe - prepare to wait if at peak times, enjoy local bread, cakes, and cookies as well as full range of fantastic food.

Can't go wrong with the Mustard Seed. Rocpool (by the river) is probably my favourite though, have had fantastic meals in there but you will need to book.https://www.mustardseedrestaurant.co.uk/
West is best for driving, out to Gairloch and up to Ullapool for Fish and Chips stopping at Gruinard bay on the way. If you head off really early you could get a day in Skye and it shouldn't be too busy.
Back from Inverness and had a very nice time - thanks all for your recommendations.
We were spoilt with the weather - clear skies for pretty much all of it.
We did eat at the Mustard Seed, nice. Drove over the Bealach na Bà to Applecross in stunning weather, the lochs & sea were like millponds.
Drove down the top half of Loch Ness to the visitors centre.
Had a surprisingly nice meal at Number 27, having had a glass of wine at a Tapas place just before. Tortilla something...
Had a good Hogmanay at the Northern Meeting Park watching some good Gaelic music.
Met up with an old Army mucker who I hadn't seen for over 25 years - was superb - met in Elgin at a pub called the Droughty Cobbler.
Went to watch the dolphins at Chanonry Point but they had other ideas. Really wanted to go to Fort George but with the weather good we couldn't miss the opportunity to head to Applecross and it was closed on the only day we had free so something had to give.
Overall a good trip - we both agreed that everyone was especially welcoming and helpful.
