Been absolutely devouring TU-160 stuff recently. To paraphrase Tom Clancy, "say what you like about the Russians but they sure do build them pretty" spin

A330 Engine test.

As a layman, can someone explain what would happen if the Aircraft "jumped chocks", Would it cause a ton of damage? and apart from the very obvious case of the Aircraft going forward, would it be classed as a "safety incident" and the relevant authorities getting involved?.

Yep we had a C130J at Brize a few years ago not jump a chock but push it on a wet and ice covered pan. Moved about 20ft.

Thankfully the power set was an in the floor type and not a trolley type as props smashing in to a power set could see bits of prop and power set going every where (damaging other nearby aircraft).

Thankfully the only damage was when it ripped the ground power connector out the side of the aircraft. Tripped some circuit breakers as contacts shorted out. Was repaired in about a week.

Why do they do this on the ground and not as part of a flight test? I don't mean no ground testing but 2mins at 100% thrust seems a little ridiculous.

Because if it fails on the ground you don't end up with a smoking crater with bits of plane and crew at the bottom of it
