Lovely consistency to the Risotto and the chicken looks tender/not overcooked.

Got a mini pork shoulder joint in the oven, it's just finished the initial blast on a high temp to start off the crackling, and it's now slowly cooking until the internal temp reaches 77c...

Sea bass, langoustine, bulgar wheat stuff and crispy chorizo & onion as a bit of a garnish.

I bloody love ribs but never really tried to prep and cook them myself.

This is something I must do sometime.

Pressure cooker is an even better friend... quick, and your ribs will literally be falling off the bone. For sweet sticky ribs, bung the ribs in, add some beer, pressure cook for 20-25 mins. Take out and lay them on a tray, baste them with BBQ sauce, honey and sprinkle with brown sugar. Place under a hot grill, turning once, until crispy and caramelised. For a version with more of a kick, when basting sprinkle on some ground dried chillies, pepper, cayenne, or whatever takes your fancy.
