I cooked a Sunday Road. Rib Eye in bone roast at 1.5kg which i deboned after a wee youtube tutorial.It weighed just over 1 kg minus bonesBoiled the potatoes from cold, for 2 mins. Roughed up, floured and applied the goose fat.

The roast was seared in a hot pan, 1 min/side then covered with L&P's and mustard. In the oven for 38 mins. The taste was fantastic. You can't get this sort of quality in a pub/restaurant. Not that I've seen anyway.

Youkshire puds to keep the FIL happy. There was also a Chocolate Cake

recent pizza made from scratch. Just started making them after finding a pizza stone in the drawer. Anyone else still got wedding gifts in original packaging stored away somewhere smile My wife had to be perfectly round! I didn't care so much

Thanks to this wee teflon pan. Egg for scale smile No need to flip it. One quick olive oil spray. Remove when still underdone and slide onto pizza 3 minutes out!

and getting carried away. This pizza had way too much topping. Less is more with these thin home made pizzas. Buffalo Mozzarella, aged feta and cheddar hehe pepperoni, ham, jalapeño and some very hot sauce.

Talking of eggs, for lunch today (sorry no pics as ate too quickly) I did a 'student version' of eggs florentine.

2 slices 50/50 toast buttered
Cheese spread on the toast (prefer mature cheese spread but dairylea/supermarket own will do fine)
Handful of rocket on each slice
Poached egg on each one.
A very good grinding of black pepper and a bit of salt.

Now this may be called something else (or it may just be uncouth) don't care, it tastes great biggrin

To those who enjoy egg on their pizza try cracking a raw egg onto a 90% cooked pizza then bung back in the oven until it just (barely) starts to set. It carries on cooking from the heat of the pizza anyway.

Might sound a bit dodgy buy it really is amazing.

Ingredients:
Fresh pasta

Green and black lettuce for salad.

Home made dressing...shallot, champagne vinegar, olive oil, salt and pepper

Chopped roma tomatoes
Chopped very fresh garlic
Shiitake mushrooms
Vidalia onions chopped fine

Garnish of fresh basil and fresh oregano

chicken breast stuffed with bread crumbs and shallots

I just put them in boiling water. Not to long so they still retain their shape and a bit of crunch, drain in a colander

Mrs Tickle is not a fan of pork chops, seeing as she is out for the day I took the opportunity to get my fix.

Pork chops, black pudding and fondant apple stack with tarragon and mustard creme.

Love those chops!

Been planning chops with mixed roast peppers and dauphs.

Spotted a loin at the butchers with the fillet still on so been dreaming about pork T bones.

Tonight is spiced BBQ poussin with "Nopi" love rice, preserved lemon, flatbreads and hummus.

I might get a pic if im still sober!

Brined poussin, salt, sugar, ras el hanout, preserved lemons, garlic, bay et etc

Low roast and then finish on the BBQ (in the p*ssing rain!)

Hummous with confit smoked garlic, preserved lemons

Nopi love rice... mission in itself

Flatbreads with toasted black onion and cumin seeds

Worth the effort.

They look epic, how do you get the crispy rind without the meat tasting like cardboard?
