You just have to brown them off in the pan first, remove, then slowly soften the onions, before reintroducing the balls to cook through in the sauce.

Important thing is to use same pan all the way through to retain fat/flavour etc

Tbh I just read half a dozen online recipes and take the bits I like and enhance/adapt.
