Yes I did chop it up to see how bad it actually was.

I'd be doing more than not paying, I'd be emailing that to their customer services and asking why their staff feel it is okay to be serving seriously undercooked chicken. If its as pink as it looks on my screen and I'm right in thinking those are tendons in a joint in the top right corner then that's a serious problem.

If that got brushed off then I'd have no hesitation in emailing to the local Environmental Health.
Cripes, that was disgusting. Agreed with above re Env Health, esp if his wife was ill, no question.

Don't try pink chicken LOL! I've cooked enough buttermilk chicken to say pink is not how it should be.

+1. There is no way that should leave the kitchen in that state. If their staff are really inept enough to under cook chicken and serve it that raw, they shouldn't be serving food. Environmental health would be interested in this.

Thanks, no, just a one off.

I was home alone so I took the opportunity to use black pudding, my wife doesn't like it. I only found this out late in our relationship, I wish she would of been upfront when we first met!

Pie dish was the one linked below, plenty big enough for a two person pie. Took the rest in work on Monday.

Assume hot water crust. Some pork sausage meat in the mix too?

Overnight in Brighton, and found this lovely steak place 'The coal shed'. Very good fillet, the ribeye was less so. Also ordered the burnt ends, wow!




And dinner last night on the promenade (place called Lucky Beach), probably the best burger I've ever had and she said the best F&C's she's had. Watching the sea roll in with the sunset probably helped though!

The filling was:

Finely chopped shallots browned off, then chorizo and smoked lardons added to release the oil/fat. Chicken thighs cut up, browned in the chorizo oil. Chicken stock and fresh thyme added then cooked/reduced for 40 mins. Finally double cream and extra seasoning. This was left to cool.

The pastry was short crust with a bit more butter and a spoon of caster sugar.

I layered the dish with chicken/chorizo mixture then black pudding and parsley and so on. The thinking behind this was not to lose the black pudding in the sauce, I wanted it to stay together.

Egg wash to finish.

As for Gregg and John, don’t mind Gregg coming round…. John would get shooed off the drive like next-doors cat.
