Fancied some steak this evening. Pan fried a minute steak, knocked up a hash brown and fried some green beans in garlic and pepper. It was really nice even if I do say so myself smile

Overnight in Brighton, and found this lovely steak place 'The coal shed'. Very good fillet, the ribeye was less so. Also ordered the burnt ends, wow!

May one just observe, chips, 8/9 chips in a tiny ramekin / bowl. Just no! Shoot the chef. Utter disgrace! Still darn sarf innit?

Reminiscent of that old pub line. Barman, could you get a double scotch in that pint.

Why, yes sir, no problem.

Well let's have it filled it up with beer then.

Beats the cheekie sod who served me a 330cl bottle of beer in a half pint glass. Just poured it to the brim and delivered it my table. Err where’s the bottle with the remaining beer. No that’s it. How does a 284cl glass hold 330cl. Do they teach bar staff how to our a beer these days.

He was punishing you for the crime of not drinking a bottled beer from the bottle, which seems entirely fair tbh. wink

Really interesting channel if you can get past the accent biggrin He goes in-depth about making ramen (and other stuff)
That ramen looks amazing, looks like it came straight out of a good ramen bar.

Check out the Chefs Table episode on Ivan Orkin.... really insteresting
Thanks for the comments, I will definitely check those programmes out. There is something about the meticulous prep and presentation of ramen dishes that appeals to my OCD!

Sous Vide Pork Loin
135F for 70mins in the water bath
Hot pan sear on each side to finish - 1 minute each side

Literally melts in the mouth!
My girlfriend bought some pork from a Spanish company who treat the pigs in the same manner as the Japanese do the Wagyu cows. It’s absolutely phenomenal. If I could remember the brand I would recommend it hehe

I haven't! And I try to keep an open mind but my extended family who are dairy farmers (and like beef) let their retired cows go to dog food for a pittance because "they're not good eating". I'd love to be convinced otherwise.

Tonight I did tandoori lamb with herby roti, dum aloo, fried peppers and red onion, mint and corriander raita and spiced lettuce, tomato and cucumber salad.

Then there was home made vanilla ice cream and home made cinnamon and pepper chocolate cookies.

Only thing is, I made the ice cream too late and it didn't freeze in time, so I had to nip over the road to Sainsbury and get some ice cream, and they were out of Haagen Dazs so it was their own brand stuff. It was fine, especially as the cookies were quite flavoursome!

Thanks!

I made a couple of little mistakes (apart from the non-event ice cream), but over all I was quite pleased with that one! smile

Awsome buffet at the splendid 5 star ITC Kakatiya in Hyderabad.

Traditional biriyani cooked in a pot with a pastry lid - lid removed and discarded before the biriyani served.

Superbly tender and delicately spiced chicken, soft potatoes with spinach, mung beans and coconut, lentil dahl and veg curry on the main plate, then on the side plate chicken and river fish lightly grilled on an open fire. Washed down with an ice cold Kingfisher Ultra or 3.
