I read somewhere most NHS Trusts have circa £2 per patient per day to provide Breakfast, Lunch and Dinner along with the obligatory Tea and biscuits.

Without even knowing the correct figure I can use common sense to conclude it is nothing like £2. The above meal is closer to £4-5 alone. I would think £10 per day. three meals, drinks, afternoon tea and other snacks.

I'd say £2 per day would be about right for ingredient costs, if anything that could be generous. Once you get into catering on a large scale cost per dish drops very quickly. I can do a better looking roast turkey dinner for 91p and pork for 71p per dish based on 75 people.

The only thing different I do is use picked onion vinager (3 table spoons) as it's a bit sweeter and use about 10 cloves instead of 3.

Usually use brisket in large chunks or whole but beef rib was nice... the bones come away when serving it lick

Oh, yes, as per the recipe a full glass of olive oil goes in.
May I ask where you got the baby onions?, I can't find them anywhere!

Use shallots if you can't get small onions or rummage round for the smallest onions in the green grocers.

white cubes are small pieces of egg white.

It had egg yolk cooked 2 ways (one smoked), pickled onion, dried capers and small bits of Worcestershire sauce in gelatinous form, which made the meat pop.

Sous vide loin of pork 130/60mins
Cauliflower cheese
Sautéed courgette

Just missing a nice gravy/sauce. Will make next time.

Meat was super tender.
