Meat thermometers are really cheap.

Take it out of the pan 5-10deg below where you want to be (e.g. Med-Rare is between 60-63deg), and wrap in foil and a kitchen towel, 5min later you'll have a perfectly cooked steak.

This is my 2nd go at making steak. 1st one came out black on the outside, grey on the inside and the texture of an old shoe. Still pretty tasty though.

This time, I ignored the instruction to cook for 4 minutes each side and in 2 minutes instead, with about 40 seconds to render the fatty side.

Pictures taken on my iPhone so stand on your head if need be.

The juices from the pan. A bit of sunflower oil and the peppercorn butter that came in the packet. I let it rest on the plate and tipped the contents of the pan over it.

Chips were done in the air fryer and the veg was just microwaved.

To each his own etc. but that sounds, to me at least, something that would just taste of oil.

Try cooking it with a little oil, salt and pepper on the steak, not in the pan. Then just as you turn it a couple of knobs of good butter and baste for a couple of minutes. I also chuck in a clove or two of garlic that i've smashed that will flavour the oil. Get it out, rest it for a couple of minutes and job done. Don't tip the contents of the pan onto it.

Possibly the best I've ever cooked!

Fillet from Tesco from their organic range.

Took out to rest for 40ish minutes. Dried off with kitchen roll, seasoned with salt and (too much) pepper.

One minute each side then two minutes a side before wrapping in foil and under a tea towel for five minutes.

Lovely! Could have been done with an extra minute or so for my liking but was lovely!

Coming here to vent as well as get confirmation. My usually excellent Butcher. Went in to get a 500g fillet. None on the counter so he pulled out a massive side of beef from the humidifier and cut one off. I couldn't see what he was doing. We all know it should be trimmed but he said nit's all good to go. £55/kg. Look at the offing fat I've cut off it. 100g. That big piece is thick fat like your index finger. I know it's only a steak but it's pissed me right off

I youtube prepping an entire fillet. There is the prime fillet and the 'Chain' on the side which is separated by a deep valley of fat. He's given me both sides when he should have disgarded the crap side

Here it is here and is always cut off and ground into mince.

Well the pictures are a let down but thankfully the steak wasn't, the thick parts were lovely and pink so I'm quite pleased with that, finished it with garlic butter smile

How are you guys getting these nice photos uploaded? Ivd tried the forum function and it's worked with a small photo but I can't crop my steak photos down to a size where it will upload and it still have the steak in the photo irked

Burwood, change butcher. £55 a kilo is pretty top end and no way should it been chain on at that price.

You need to resize it, not crop it.

You need to resize it, not crop it.

Send it to yourself on facebook messager and it will be ok to upload.

The fillet for sale in the display is always very 'clean' and the meat they sell is second to none. But there is no excuse for this. I'm taking the trimmings into him on Monday to have a word. If he accepts it's wrong and does something about we will see. I'm definitely looking at other options local to me.
