Bought another Flat iron steak, the last one was lovely, it is so flavoursome but with he texture of rump steak.

We be cooking tomorrow, my new favourite steak over rib eye.

Not pretending the quality of the beef is world class but for an every weekend joint its a hell of a lot of meat for £15! It's cheaper than mince in most butchers!

It's been far too long since a post on this thread! So, on a 'fresh' April evening, what else is there to do other than fire up the BBQ for some t-bone.



Meat plate. Take your pick, but mine is the t-bone.




Stupid iphone auto rotate thing. They are correct on my PC.

Looks fantastic although I'm fearing for your table when you pour the gravy, unless this was the "presentation" phase and decanted onto plates after?

Take one 500g extra thick rump steak:



Season and stick it on the hot griddle, 3 minutes each side, and 3 minutes on the crazy thick edge:



Leave to rest. Enjoy!



One of the best steak I've had in a long time - and all it was just the normal 'Market Street' thick cut rump from Morrisons. £6.50.

So tender for rump! Beautiful.

Sirloinage:



Into a warm pan for 15 mins or so to render the fat:



Then into a scorchio skillet for a couple of minutes each side to cook and do fancy grill marks:



Steaks off the heat to rest somewhere warm. Meanwhile fry off some mushrooms in the pan with the steak fat in it, lob in some cream, fry off a tomato and heat some frozen peas.



Plate up steak, peas and tomato with mushroom sauce.



Enjoy.

Some good looking stuff here.
As an (ex)butcher (you never lose your knives) I can let you into a saying;

'The butcher ALWAYS takes home the blackest piece of beef'

The bright red stuff 'atmospherically packaged' in supermarkets is not the best.
