Mrs 8 was out for dinner last Saturday so I had to fend for myself. This was an Aldi rump, dry rubbed with Angus & Oink Korean Seoul seasoning and a little salt then reverse seared to 47C internal. No chips or peas but the salad did contain Edamame beans. Dressed the salad with a mix of Lao Gan Ma crispy chilli oil, dark and light soy sauce, rice wine vinegar and spring onion, drizzled some over the sliced steak too. Took a punt on the wine, actually really nice!

Starting a reverse sear and firing up the charcoal

I’d normally reverse sear a big, dry aged bone-in sirloin but I only just got home and I have stuff to do so it’s gone in the sousvied to come up to 51degrees before searing.

I should have put an iron pan on the BBQ - it obviously isn’t hot enough to give a proper char

marks and spencer’s ‘thick cut sirloin’. in the oven with the potatoes until it hit 40-45ish (only using a basic meat thermometer) then a few minutes either side in a pan. maybe a little bit rare for some, but was delicious!
