Its definitely the Mozzarella that makes it wet Ben, if you can get hold of Mozzarella Cucina it works a lot better.

Just a shout out for James at Pizza Pilgrims too, he's be awesome throughout this lockdown and answered a load of my questions when making dough over the past few months, well worth the support if you are in London and want pizza, as it's also pretty damned good too!

I do both... slice... then tear in half the slices.. hehe

Cutting mozzarella balls instead of ripping them definitely makes a massive difference.

I made up another frying pan pizza kit for a friend recently, he was surprised at how good they turned out. Was hoping to convince him to buy an Ooni but he’s sticking with the frying pan method for now

Look good. For mozzarella I cut (as mentioned) and leave on kitchen paper in the fridge for a few hours. Also, if it's a bit damp still, I dust it with parmesan. Not sure if this is a thing but it works for me. Tastes nice too.

yep. The cheese which comes in the watery pouch needs cutting a few hours before use. I freeze my cheese so it's extra watery. in a bowl left uncovered in the fridge for a few hours after cutting does the trick

I am looking at buying a pizza oven as a gift. It needs to be portable (will be used in a motorhome) so which is better the roccbox or ooni?

Seen a few people’s final builds on a Facebook group and they’re impressive. I was gonna have a go myself but ended up buying an ooni koda.

I managed to get one which turned up today with a small dent in metal trim grumpy

To add salts to my wounds it has been impossible today trying to get patio gas. There's apparently a nationwide shortage of Calor gas bottles and outlets are only doing a one in one out exchange under orders from Calor.

Managed to source an empty 13Kg propane bottle on Gumtree which I have arranged to collect tomorrow. Just need to wait and see how quickly they can get a replacement oven out to me now. Not really interested in a discount for the dent.

I’ve never thought to reheat them, I just end up binning a dough or 2 after an oven firing session.
Do you just chill in fridge, then reheat in a hot oven for a couple of mins?

Have you tried flogas? I ordered my gas from them with no bottle fee and a few days delivery.

I. Wouldn't worry about a small dent. Especially if they are offering a discount. It will be black in a few uses anyway.

I managed to get a turning peel which should be here tomorrow.

Places like Rudy’s sell frozen pizzas. Seems they cook them without cheese, let them cool and then add the cheese before freezing them.

I just managed to bad one from the Gozney site ! Its Green but WTF !

Yeah I tend to top the marinaras with some fresh toppings, then cook for about ten minutes @200c or so. They are much more crispy than freshly made in the WFO but still very good and better than shop bought. Or if doing slices, you can use the frying pan method

These were retopped and heated in a frying pan the day after my last batch


I also freeze them too, that works fine.

Also I always add some fat/oil to my dough when making them as that helps them quite a bit when reheated - no oil doughs can get a bit tough when reheated

Sorted now. Collected an empty 13Kg propane bottle off a local Gumtree seller today and got it swapped out for a full one. New regulator ordered from Amazon as I believe the Roccbox ships with a push on patio gas regulator.

Still to hear back from them but I assume a discount will be offered to save on all the faff. I'm in two minds. It is very minor and I could probably tap it out from the other side which would just involve drilling out some pop rivets and re-riveting back on.
