That's quite a Chapstation you're building. I have something similar planned myself - brick built barbie, pizza oven, small prep/serving area, Belfast sink underneath to fill with ice to keep the beverages cool.

Its max lift at full reach will probably be IRO 500kg...

There was a metal thing sort of arc with a flat edge and handle loose when it was delivered.

Any one have the same and know what it was for?

Ash/embers tool. Use it to move the embers around in the oven.

So tonight’s effort I feel was one of my best yet:









Caputo Blue 00
65% hydration
300gram balls
4.5hrs bulk proof 3hrs balled
90 seconds cook

Chorizo, pepperoni, nduja, candied jalapeño

I’ve been offered a few quid to sell my pizza oven, it’s a metal one and a good few years old. I’ve had some great service from it but given what I paid for it and what somebody has offered me, I’m considering selling it and buying one of the smaller portable ones.

Question. Is, rocobox or ooni, any opinions please?

Where do you guys find nduja?

I don't want to buy it online from some 'saw you coming' pretend-artisanal hyper-capitalist robber baron at £115 a kilo.

I want to buy it in a shop for a price approximately similar to other pig-related items.

I've bought the M&S one a while ago which was ok, it's in a jar

Adimaria sells a 500g nduja sausage for about £7. Plus delivery of course, but if you are getting a bunch of ingredients from them it would be worth it

I did exactly that and sold one of these for £100 recently, which we bought for maybe £30 second hand two years ago:



Personally I will go with an Ooni Koda when stocks return. Gas is fast and simple, and the price is appealing vs the Roccbox.

Mines from adimaria however now have an Italian shop in Portsmouth and he seems to get some in every now and again.

Can highly recommend Duchy Charcuterie.

Nduja is £3.50/100g. Doesn't feel expensive at all at that price.

I'm going to have to stick with the cocaine and bull spunk pizzas until I get a better offer for my soul.
