I can highly recommend The Dark Horse bar, an amazing cocktail bar. You’ll need to book ahead for a table.

The Priory has a Michelin Star - excellent food and epic cheese trolley. Lovely terrace if its sunny.
Olive Tree also lovely.
Both the above have great accommodation too... and being proper hotels they have excellent bars for your gin requirements!

If it's Bath, it's got to be the Hudson, it's an award winning steak house. The steak's are among the best I've ever had outside of the US/Canada, and even then they rank high. The sides are also excellent and the dessert is too.
It's kind of expensive, but worth it. I try to go there a few times a year.

I'm local. This is the best advice you will get. It's kind of expensive, but worth it. I try to go there a few times a year.

It is a short taxi ride (or walk) from the centre but can't recommend Menu Gordon Jones ( http://menugordonjones.co.uk/) highly enough

Get on the train to Bristol....
Knew that was coming at some point ;-)Guys - thanks for everything so far. Have booked La Perla for the Friday (post Spa, so we can have as much/little etc) and it looks very cool.
Saturday I've pinged the Dark horse to get a table later on, good tip!. Hudsons or Circus look good for Saturday, thinking being that while I want to have a great meal, it's not necessarily the whole focus on the night, we've done that at Peels in Hampton Manor near where we live. Any other options?

OT: Why do you have 3 similarly capable cars in your garage? a 218d GT, Golf GTD and A6 Avant all do kind of the same thing...curious.

218 G/T is the missus/family car - and very good at it too!
I had the A6 which was stolen about 18 months ago. I liked it but wasn't sad when it went. Replaced with a company car reallocation of the GTD for 6 months (absolute hoot, got through a set of fronts in 7000 miles!). That lasted until my new company car was delivered, a 330e. This is OK as a family car but a bit limited in boot space for camping/family holidays/bike carrying etc. However, as a car for me as a work car, it's ideal.
