Baby back ribs and a mixture of different roast tomatoes and potatoes. Made a 'Texas barbecue juice' from amazing ribs site to go with.

Wife is at work tonight, and kids in bed, so I am treating myself. All from scratch as always, roughly an hour and it will be ready...

Peppered Rare Denver Steak ( they ran out of Flat Iron ) with home made Chilli Chips, Garlic Portabellos & Peas and a home made garlic herb butter.

Great looking steak! Pardon my ignorance but what’s a Denver steak, is that a cut? Familiar with flat iron. Cheers.

It’s a recent American invention and is cut from the chuck roll near the shoulder. Very tender steak like fillet

It wouldn't be my first choice, I find it a little more grainy than Flat Iron or Ribeye. Bavette Steak is another alternative. They are all abundant in Morrisons normally 4 steaks for £7, my go to for meat at the moment.

Cheers, its my favourite meal Steak. Interestingly, the chips are something I learnt from the Gordon Ramsey cook along live back in... probably 2011 now. Simply slice the potatoes, skin on, to the desired shape and length. Place into boiling water for 2 mins ( ish ). Then drain, add salt, pepper, chilli flakes and oil ( rapeseed or olive ) shake well. Transfer them into a pre-heated oven and tray at 220 degrees C. When they hit, it should sizzle loudly against the hot tray. Bung in, leave hig heat for 10 mins and occasionally shake, then reduce to 200 or thereabouts for around 40 to 45 mins, paying casual attention and shaking when required for even cooking.

Kids dinner tonight, same chips as my steak post, left in for longer on a lower heat. Worked really well actually, properly crunchy and crispy, I may adjust my method in future to achieve the same.

This was just a simple healthy dinner for them, chicken breast with herbs and pepper, oven chips, and petis pois + garden pea slightly minted. I opted not to include the chilli sauce in the background of the second photo, that was from the Chilli Farm on the Isle of Wight. Seriously hot, and around 1.2 million Scovilles according to the literature when I purchased it, not far below the Naga.
