I make flatbreads from a simple yoghurt/flour mix on a flat aluminium pancake pan from Ikea, will try that first before spending on the cast iron one but it is (aged) non-stick so might struggle. Might also try it in my pizza oven which gets similar temps o a Tandoor.

Yes - wet for a week, pellicle for a day, dry rub, smoke to 205 then pull. I use the wrapping technique around 60% through. Rest well.

Sorry, I disagree, if I'm cooking plain tuna steaks I would generally use a hot griddle pan but from previous experience I didn't want to burn the sesame seed coating, so, a plain pan at a slightly lower temperature was best in this case as burnt sesame seeds are not nice.TeeRev said:

I don't like disagreeing with the expert here and I can see where you're coming from Tony but I'm not sure I could be bothered with griddling then coating and then pan frying again, also, I've never thought that tuna needs resting like steak, I'll give it a try next time though and report back.

Cocked up the Honey and Garlic regarding instructions on Soy sauce, so was basically steak in soy with hint of garlic and honey : /
Or chicken with fajita shaker, peppers, onions, tomato puree in a little water. Couldn't be easier and not really into potato, pasta or rice atm.
