Leg of lamb butterflied and done on the BBQ a la Rick Stein. Mocorran flat breads abs some roast cauliflower with Old Bay seasoning.

Never thought to do chorizo on the bbq, will try next time. Halloumi is something else over coals though, love it.

Halloumi is my go-to barbecue starter, but I have never tried it with chorizo. I'm trying that tonight.

I hope you do Mr Flashmans soak before too.

I have flat kebab shop style skewers and everything (apart from burgers and sausages) go on them. Then I have heat proof gloves to turn them.

Always soak my halloumi. I think it must have been Mr Flasmans tip I picked up, it was off here anyway.

As a side, the idea came from a Food Festival stall, they had cooked chorizo and skewered them with cold mozzarella balls, very nice lick

Obviously I used halloumi, similar cooking times as chorizo, worked well. Kids also love stuff on a stick to eat, plus less washing up!

It was a very hot day today so I decided on a light and mostly cold dish.

Panko (with lemon zest, paprika, salt & pepper) breaded pork schnitzels with potato, red onion, apple, celery, yoghurt & mayonaise salad and lightly dressed watercress, rocket & spinach salad.

Just right for a hot summer evening.

Quick dinner grill in the 35C evening weather. It’s 2 half pound burgers on one bun. I didn’t even try to take a bite it was that big. Had to use the knife and fork.

Not made smash burgers in a while



2 3oz Aberdeen Angus smash patties
2 slides of smoked cheddar
Crispy fried onions
Beef tomato
Lettuce
Top and bottom buns slathered in homemade spicy Big Mac sauce

Good choice of cheese too. These are good for a burger if you want a change

It's a more solid bun so you might need to freshen it up a bit in the microwave or go the other way and toast it with butter for extreme taste.

That's the best burger shot for a long time but hobos looks really tasty too.

What's all this green lettuce and red peppers "make it look healthy" stuff though?

A burger should be down and dirty.

Bun
Patty
Cheese.
Onions.

And maybe a pickle if it is the weekend....

Tomato under lettuce. Salted and dried before assembly to limit sogginess. Primary purpose of the lettuce is to serve as a juice barrier and prevent lower bun disintegration by wicking cheese and beef fat onto the plate. It partially worked.

A regular dinner for me as well, except I have chips as well getmecoat

Even putting it on the next menu at work for 160+ kids... thats a lot of breadcrumbs.
