It was a very hot day today so I decided on a light and mostly cold dish.
Panko (with lemon zest, paprika, salt & pepper) breaded pork schnitzels with potato, red onion, apple, celery, yoghurt & mayonaise salad and lightly dressed watercress, rocket & spinach salad.
Just right for a hot summer evening.
A regular dinner for me as well, except I have chips as well Panko (with lemon zest, paprika, salt & pepper) breaded pork schnitzels with potato, red onion, apple, celery, yoghurt & mayonaise salad and lightly dressed watercress, rocket & spinach salad.

Even putting it on the next menu at work for 160+ kids... thats a lot of breadcrumbs.
I made homemade elephant leg kebab tonight, although I didn’t use lamb, I used pork by accident pretty dry and not much taste.
Left over bbq peppers added too, lovely flavour
Had plenty of this on it too (added more after photo)
To contrast, finally managed to get to our fav pub (for food), they do amazing burgers and pizzas. Few beers in a pub garden followed by this, top notch

Jerk cod (homemade jerk seasoning) & creamed chilli sweetcorn with charred spring onion, which I think I could do better with next time, but I was very surprised how tasty and delicious it actually was!
I knew it was going to be a light dish so I went for it with the pudding - pavlova topped with cream, strawberry halves, blueberries, homemade chocolate sauce and a sprinkle of icing sugar.
It did me a right good delight!

I done brisket yesterday, 8 hour cook and I was disappointed. But I just had it on its own.
Left overs tonight, I sprinkled some mozzarella over it when I warmed it up, added some jalapeños and salsa to my brioche but and it’s transformed! The meat was tender-er too.
Served with crispy/burnt Mac and cheese, breadcrumbs on top.
