Lamb Shank Curry

Masala Ingredients:
2 tbsp fennel seeds
2 tbsp coriander seeds
2 tbsp cumin seeds
½ tbsp fenugreek seeds
½ tbsp black peppercorns
1 clove
small piece of cinnamon stick
10 green cardamoms

Toast the whole spices, then let them cool before grinding them into a fine powder. I use my NutriBullet.

Next, a simple curry paste...

Curry Paste Ingredients:
thumb-sized piece of ginger, peeled
2 large red onions, peeled
10 cloves of garlic, peeled
2 red chillies

Blend with the dry spice mix into a smooth paste.

Brown two lamb shanks in a casserole then remove. Now add some butter and gently fry your curry paste for around 8mins stirring regularly. Add a couple of onions finely sliced to the curry paste while frying.

Add two tins of whole plum tomatoes and 300ml of lamb stock. Bring to a simmer and check seasoning.

Return the lamb shanks to the casserole and cook in the oven at 160 for 2.5 hours. Lid on, with just a small gap to release some steam and help thicken the sauce whilst cooking.

Once cooked, remove from the oven and stir in some finely chopped fresh mint leaves and coriander leaves. A spoonful of natural yoghurt and a squeeze of fresh lime juice. You may want to skim off some of the excess fat from the surface prior to adding the herbs, etc.

Garnish with freshly chopped red chili and serve with basmati rice. A spoonful of mango chutney works well on the plate.

Delicious.

I could have got german shrimp from Aldis or Lidl but instead my wife bought me home a load of chicken nuggets the chef cooked for an evening when mums and dads visited the school ( private of course wink to see if they could get their kid into it.

Yep, that is left over school dinners you have there... as I said po boys...

In my day we had semilina pudding with strawberry dollop and we all mixed it in so it went pink.

Hey I am spamming the thread.

Which is ok as it is FDR and spam is almost a food.

We need to do a spam cooking competition. We have not had one in a while.

I've just remembered that spam is a thing and have had spam fritters for the last 3 days, as well as tomatoes, cheese, sausages and just about anything I could dip in batter. Oh my god, spam fritters are God!

I thought that too, but I did look at some of the other videos and found them interesting enough to make me want to try some out.
The ready supply of mountain fresh ice cold running water is going to be a problem.
The woods and isolation isn't.

i've never been a fan of the teardrop shaped chicken dipper type nuggets. much prefer nornal ones, and they have to be battered ones, not breaded.

bad? oven chips are 4% fat and don;t really have that many ingredients (none of which are bad)
