As above. It’s about 1:30hr round trip for me but it’s worth it. The stuff they sell is absolutely incredible. ( I have a local butcher within walking distance)
The burgers were amazing. They do look rarer on the photo than they actually were. Very beefy “aged” flavour, definitely all the better for the bone marrow in there. Only £2 each which I honestly think is a bargain given the quality of them.
Next up is beef wellington tonight made with 750g filet from T&G. Should be enough for two people? :-)

Picked up some mutton fillet this afternoon from my local Carrefour here in Dubai.
Seasoned with dried oregano, paprika, salt, pepper and olive oil.
Onto skewers with green peppers, onion, jalapeño, tomato, courgette.
Grilled over hot coals and served medium rare. Mutton has a lovely rich flavour and this cut was super tender.
Served with hummus, tabouleh and a garlic sauce.
Seasoned with dried oregano, paprika, salt, pepper and olive oil.

Looks tremendous! So that I know next time I'm in UAE, what does mutton mean there? i.e. here it is from a sheep but as far as I understand in India it refers to goat. There are lots of Indians in Dubai, hence the question.Seasoned with dried oregano, paprika, salt, pepper and olive oil.

I’m not sure to be perfectly honest. I presumed it was sheep. Will ask when I’m next at the butchers and let you know.
Thanks, just idle curiousity really, found this out from an Indian friend who used to live here and he got odd responses when he asked butchers for mutton. Nothing fancy. Whack thick tray (decent tray that holds heat makes big difference) in the oven with a good dose of oil. Goose fat this time of year.
Parboil for 10-12mins and give a shake in the pan to fluff edges.
Chuck potatoes on the tray, sprinkle rosemary over the top and toss in the oil to ensure they are all covered (with oil and rosemary).
Stick in for 40mins at 180, tossing at about 30mins.
Whack the oven right up to 220-230 and brown them up for 10-15mins. But keep a close eye as they’ll go hero to zero pretty quickly.
