So had dinner at Alinea in Chicago https://www.alinearestaurant.com. An amazing experience, with pretty indescribable food and theatre that goes along with it.
(Sorry photos a bit crap - no flash allowed).
Was the most expensive dinner I've every had (tickets are between $200 and $400 per head not including drinks) and yet at 2am in the morning we ended up at a local bar and polished off a ropey pizza each...

The point of Alinea is not the food, its the environment created around it (or at least it was when i was looking at it), its the sound, smells, textures of the surroundings and how your brain processes it in combination with the food.
Its a very interesting area of food, i have used the principals of multi-sensory eating over the past few years to influence childrens eating habits, it does work.
Anyway... back to what i was going to post.
Adding to the previous debate, heres my spaghetti bolognaise or at least the bolognaise bit.
lots of veg, lardons, fine diced beef, white wine, beef stock, bit of garlic and rosemary, little bit of tomato and milk.

Slightly surreal and fun - constant little surprises like the bowl below filled with sea salt was set on fire, (after this course), and hot charcol from this bowl was used to cook a small steak dish, then a few courses later they dig out a potato which by now had cooked and used it for another course. The apple flavor edible helium balloon was good. Not going to lie, the meal was slightly tinged with anxiety on how much the bill was going to be! Apart from the food was the restaurant as I imagine, a bit surreal?

Yeah I wouldn't go back if I had to pay again... There are a ton of similar Michelin restaurants, maybe not quite as cutting edge, but similarly serve more art than food like Oriole, Smyth, Roister, Schwa (that place is surreal), Spiaggia etc. I'm fortunate that I live in one of the best cities in the world for restaurants (Chicago has over 8000 restaurants). If you really like food, drinking fun and culture, Chicago is pretty hard to beat*, it's just not really on the tourist agenda and most people have the impression it's a war zone - not the actual super clean city with amazing architecture, river walks with cafes and restaurants with 20 miles of golden sandy beaches on a vast lake that it is. Everyone single of my friends that have visited can't get over their preconception vs reality with Chicago, several have now made repeated visits because they enjoy it so much (plus it's cheaper and easier to get around than NY, being one of the few US cities with good public transport and no need for a car).
- Disclaimer - never ever visit Chicago in winter, despite nearly touching 40 degrees in the summer, winter can get below -30...
