We had this last week and to be honest, my iPhone photos don’t really do it justice, at all. It’s pretty simple, half a dozen beaten eggs, softened leeks, peas, dolcelatte cheese and precooked, peeled and sliced new potatoes. Started off on the hob, finished off with a quick blast in a hot oven.

I can’t claim any credit, other than cracking and whisking half a dozen eggs, then adding freshly ground sea salt and black pepper (the latter under strict supervision of my Lovely GF). It’s a pretty simple dish but it’s one of my favourite things. I first had it when we had a picnic on the beach one evening not long after we’d starting seeing other. My GF produced a similar frittata, as well as a load of other good stuff, from her backpack, including a bottle of Chablis and proper glasses, too. The frittata was still warm and the Chablis was still chilled. It was an impressive feat, which she managed with aplomb and watching the sun go down over the beach together was one of the best meals I’ve ever had (I may be slightly biased of course!).

Fair comment, but she’s been an absolute star from the day we met and even more so over the last couple of years since my bike accident. She’s put big chunks of her life on hold to look after The Idiot and me.

Eaten at 4.30pm so either lunch or dinner. Low Carb. 2 whole eggs +6 egg white, prawns avocado, mushrooms plus a bit of parmesan. Lot's of seasoning.

You don’t want to know my experience of my now Wifeys first meal she cooked for me!!

Ribs done in the slow cooker. 8hrs on low, another coat of marinade then 5mins under the grill at 250deg to sticky them up. Fall off the bone delicious-ness! lick

Rotisserie chicken in a tandoori style marinade. Also did garlic naans on the BBQ. Made a corriander raita to go with it all.

Bit of a Mexican night.... again! Lol

Pork belly slices marinated in chipotle, lime juice, Mexican oregano, anchitote paste for a day, then grilled to crispy, gnarly level. ( was raining so bbq was out!)
Tomatillo & jalapeño green salsa
Chipotle yoghurt
Griddled pineapple, red onion and chilli salsa
Super hot, spiced red onions

Finished off with some homemade baby churros and chocolate dip!

Last weeks Rib night! Chinese pork ribs 2 ways...

Sticky Chinese bbq style and salt, chilli and pepper

Couldn’t make my mind up which one was best, so just kept taking turns eating them!

Big meaty booker ribs too!

Marinated overnight, Roasted in the oven then deep fried before tossing in sauce or salt/chilli mixture
