I used this to marinate the pork. Definitely recommend it.

Yes this looks like a deleted scene from Pulp Fiction but it tastes delicious.

Been cooking this for a few years and probably my favourite dish right now, pad kra pao gai.

It's so good.

Dinner last night; Paprika chicken skewers, paprika tats, salsa (onion, pepper, coriander and red wine vinegar) with spicy mayo (mayo, chipotle and red wine vinegar + seasoning).

Not a looker by any means but a proper pie (top and bottom) chicken ham and leek with broccoli and roast kale.

My chicken pies never turn out as thick and creamy as I'd like.

Start with a thicker roux, and fry your chicken off first (to get rid of any water).

And as above. The richness come from a thicker roux, rather than any amount of cream.
