We had a huge storm roll across America yesterday from Guatemala to the Northern parts of Canada. It brought higher temperatures and heavy rain which melted the foot of snow we did have. Our hopes of a white Christmas dashed.

I’m going for a Rib of beef (2) for 5 hours @70deg C using the reverse seer technique

Yes no Brussels. But more than happy with this.
Removed the Turkey skin, and baked it between two oven trays to make Turkey crackling.

I added some cherry wood to the charcoal this year. The light smokiness really lifted the turkey up. Everyone was super happy with it. Currently taking a break before cheese and dessert (haven‘t decided on the order yet).

Cor! Never had one, keen to try one day. Beef looks perfect for me, I like joints medium well and steak medium rare.

Sadly I didn't take a picture of the Lamb Shoulder but it was amazing. The shoulder blade came out clean as a whistle without even having to carve and you didn't even need a knife when eating it. It was immense!

not a tesco one but local pub for 40 a head, did a 5 course heat at home meal, really tasty and good value, as nice as in the pub.

Ours was the usual but came out pretty well and within 15 minutes of target time.

Turkey was really moist (6Kg) - roasted upside down with it turned the right way up and uncovered for the last hour, then left to rest for 1 hour (in a tray covered in foil, a towel, and an old quilt to keep it hot).

Stuffing home made from breadcrumbs chopped up from homemade bread, and sage from the garden with onions and sausagemeat.

Pretty happy with yesterdays efforts, polished off today with round 2. Only thing i cheated on was the yorkshire puddings.
