I thought about an excel ss but thought it would take the fun out of the last 40mmins when everyone goes a bit mental fussing over the final prep.

He could free up loads of time (and enjoy Christmas Day far more) by prepping today. All the veg peeling etc.

As I mentioned previously, I even roast the meat and make the gravy the day ahead. The slice it cold and reheat in the gravy.

The veg is prepped, we have roast potatoes, roast parsnips, roast carrots, steamed broccoli, steamed brussels, shredded brussels with onion, garlic and black smoked streaky bacon and cauliflower cheese. It is all now sat tubbed in the conservatory keep cool.

Now to prepare (and test) the eggnogg

The turkey is in and is t-40 minutes from completion!

Sprouts can be improved considerably by adding chopped bacon, onion and chestnuts that have been gently sauteed in butter and black pepper.

Well J Oliver spiced goose recipe was a piece of cake. The goose from Goodman's geese was excellent, now the challenge is to devise recipes for the leftovers. Going to try a few that we would use for pulled pork shoulder leftovers.

Only fly in the ointment being the oven need a knock off and reset procedure as it decided not to keep temperature during the critical stage of crossing up the roasties etc during the goose resting time, so they were very tasty but insufficiently crispy.

Pigs in blankets didn't achieve the heights of excellence shown by those from Tony21k a page or so back, but nevertheless worked.

Chestnut stuffing quenelles, usual recipe but with extra chestnuts this year, mmmmmmm.

This afternoon has been a siesta time.

Started the day with a decent brekkie:



Dinner went well, turkey crown in an oven bag with some seasoning and butter (just put in the oven and forget, it came out beautifully), stuffing, goose fat roasties, honey roast carrots and parsnips, shredded sprouts with bacon and Worcestershire sauce, Yorkshire’s, pigs in blankets and gravy.



Really happy with the way that it came out, especially the turkey. Previous years I’d messed about with flavoured butter behind the skin, injecting butter into the breast and all sorts, this year just popped the crown in the bag and forgot about it, came out beautifully and very moist.

I am not keen on turkey breast for a Christmas roast as it is like a whole toilet roll dropped down the toilet and then try to make it taste great. It has to be the worst bird of all of them to cook for taste, so why do people do it? A conundrum.







Having said all that my two bird roast was a disaster. I made enough cauliflower cheese to feed 8 and only me ate it . Worst of all, they said it was

TOO CHEESY

Has that ever happened before in the entire history of earth? You're cauliflower cheese is too cheesy. I am like Elon Musk cooking the Xmas meal for flat earthers.

How do you keep the head steady? Vents I can think of but adding more fuel throughout. Maybe you don’t have yo. Indirect at 165?

My effort.

I've got a total of N number of humanoids doing a dinage experience that can be summed up as 2<=N<=4 on Christmas Eve but this soon rationalised down to 2<=N<4 on Christmas day when my mother in law went Awol and Spudgun and Dave Hedgehog didn't turn up either.

So giving that basis I made far too much cheesy cauliflower. I will be eating it for the rest of the week and, to quote Buzz Lightyear, beyond.

Getting back to the main meal one simple chicken with onion and one with lemon and herb and garlic

I really did enjoy ramming it in. Rule 11. Enjoy The Little Things. Didn't have to use Rule 2. though in this case.

Now the main plating session, for people not used to seeing a 3lb cauliflower in the wild without David Attenborough doing a talk over in a soothing voice then look away now. It is at 11am.



It was so big that the table cloth, due to gravitational forces, started moving so slowly over towards it and then disappeared to a singularity.

So in summary , another fantastic year where the effort did not match up to the results. And so may it continue, for your kids and your kids kids and the milkmans kids who are nearly yours ad infinitium.

I do prefer chicken. Looks great. I have a sure fire Yorkshire process. It’s all in the recipe. No guessing. It must be on point but the results are worth it. Merry Xmas G

Although this is sliightly early for Christmas this year I went down the supermarket and suddenly finding myself mass buying stuffing because

"It lasts a long time"

Which is actually insane if you think about it... I bought loads of sage and onion stuffing ... yes, I am that person. The stuffing hoarder.


However, I then got bored waiting for it to mature till Christmas 2020 and decided to put a cheese, herb and breadcrumb topping on it... plus some extra chillies



It packs a punch and highly recommended come December as an extra for your big bird.


No, not that one you have to talk to, the one on the plate.
