The cassoulet is pretty simple
Sweat down celery, onion and carrot. add a couple of cloves of garlic and mushrooms, I just used chestnut mushrooms and cook until the mushrooms have lost most of their water. Stick a glass of white wine in and cook the alcohol off. Put a tin of tomatoes in and some veg stock, I also put in some time, marjoram and a couple of bay leaves.
Simmer until the stock thickens and add a tin of haricot beans. Cook some vegan sausages, chop and add to the sauce. I use Morrison’s own ones as they have a nice herby taste. Once the sausages are in it’s ready.
The celeriac is really easy, just peel and roughly chop it into chunks. Stick in a 200deg c for about 45 mins with garlic, thyme and salt & pepper. It should be slightly browned on the outside and soft in the middle.

A beetroot wellington with many other bits....nice!
Too full for pud on the day....nice cake I made (& fed with brandy for 6 weeks!), plus cheese and biscuits later.....
The drink-free bit was unintended.....staying with elderly relative, we forgot to bring some, so just chilled out without....
Surprised how I didn't really miss not having the meat - I am NOT veggie, but our 2 'kids' (twenties) are, as is their Gran....so we just went with it!

Tbh prob tastes the same as a chicken burger I just haven’t been in for 5 years and all I wanted was a bucket..It was closing time too so I didn’t exactly get their finest!
Also had a Greggs vegan steak bake on way home as had monster hangover. Never been in Greggs in my life. Tasted good tbh and reminded me of pies that I used to have at the football.
Would try not to eat either that or the kfc again as that’s not the point of being vegan to me but alcohol forced me!

Quinoa, roasted aubergine and sprouts with a tahini sauce. Successfully passed the "Even-I-can't-fk-it-up" test and tasted good.

We're cooking an increasing amount of veggie or vegan food at home with a daughter who became veggie a couple of years ago, and the eldest daughter isn't overly fussed either way, which is encouraging that we can eat veggie and not have grumpy teen daughters at the table.
There are some food stuffs that would absolutely stop me from going completely veggie (bacon, for example!), but we enjoy the challenge of making and trying non-meat based dinners.
Yesterday I made JOliver's roasted tomato and fennel risotto for the 2nd time, having bought his VEG book at Chirstmas, and it was bloody lovely!
My wife also made an excellent nut roast (we all tried it and loved it) for our daughter for Chistmas dinner, which she ate with the same roasted veg we had, sage and onion stuffing with added Chestnuts, and "beef" Bisto gravy, which is actually vegetarian!

The white sauce is delicious cheese sauce on cauliflower, and the thing at the top is a slice Tofurkey roll with stuffing. You need to taste both before deciding whether they are grim or not. Phil. said:

Some might say, if you haven’t anything constructive to say then what is the point in saying anything? None of my responses were defensive, rather factual, providing more detail. Your comment was completely uncalled for but does follow the PH keyboard warrior trend for being aggressive or being sheep like as some might say.
