A few things from this weekend
BEYOND MEAT burgers
Local supermarket in our little town sells them, 2 for €4.99
Bloody hell, they're good!
My veggie daughter felt almost guilty eating hers as it was so much like meat, texture wise. How they've worked the protein structure is truly incredible.
Last night I cooked a vegan curry - chickpeas, broccoli and spinach, which turned out very well (BBC Food recipe), then made it a veggie dish overall by making coriander flatbreads from Greek yoghurt and flour.
Everyone scoffed it up!

From memory, there are two recipes for lasagne in the Bosh book. I forget what they call them both, but the one nearer the front of the book is the best lasagne I've ever had, bar none. Bosh! Thai No-Fish Cakes. Pretty good - subtle Thai flavour but lacking the fish taste - adding the optional Nori (the green sushi seaweed sheets) may have sorted it, had it been in the cupboard...
Bit of a faff though - not really a get-back-from-work one.

I've just started doing cauliflower steaks. approx 1 inch thick centre cross section for the steak- use the remainder for cauliflower cheese the next day. If needing 2 steaks, then 3/4 inch either side of half way would be OK .Olive oil, sprinkled paprika, garlic granules, ground coriander/ cumin and ground tumeric on each side - then bake on baking tray ( I do it in a tin foil parcel) at 180c for 40 mins. You can experiment with any ground spices to see what you like/have in the kitchen
I have it as a side dish and bake in the oven with other stuff. The cauliflower steaks, if some leftover, can be reheated the next day in the microwave with another meal.

3. Double dipped in batter than flour again to get more coating
Results are here.
The last one, in batter and then flour far the best as crunchy and no greasy taste. The onion has enough taste not to be lost amongst that coating.
I'd recommend any vegetable done in batter done that way.
dunked in thin batter and then dunked in more flour afterwards. A "wash" is probably not thick enough though would be better than nothing.

Try the recipe with nettle tops in place of the spinach. They have a 'herbiness' which really works in the dish.
Some wild garlic would be a good shout too. I have noticed this popping up locally.

Tried this 'soup' (stew) last night. Berbere spice is interesting - a bit like a perfumed chilli powder. Looking at the comments in the Guardian I decided to add carrot, but I reckon once you've got the base sorted (onions, garlic, ginger, berbere tomatoes) you could throw in any veggie or veggie sausage and it'd be great. Overall, quite similar to Fast Bug's earlier African stew... Thumbs up! I don't mind eating the same thing every day when it's this good:
