Best burgers and burger buns?

Tried the M&S Best Ever burger today, but wasn't impressed, tasted a bit bland.
I agree - tried them about 6 weeks back. Possibly the worst burgers I've tried this year (and I've tried a lot of different ones since getting a new BBQ in Mat). Think the problem (and it's an issue I have with M&S food in general) is with the big push to reduce salt in their food they've not added fat back in (or anything else) with the result that a lot of their processed food is comparatively bland.Bought a packet of these a few weeks ago, they were very tasty.

Also tried a brioche bun with them, too sweet for me, prefer the normal rolls. I like the sound of the ciabatta rolls mentioned earlier, will have to give those a go.

I buy the ALDI equivalents all the time. frozen ones i use just to eat with whatever. chilled ones are always used for making smash burgers. it's a good improvement over just normal quarter pounders that just don't feel very beefy. I don't think there's a need to spend more on waygu versions or other pricier variants. Flavoured ones (like sweet chili burgers) I have never noticed it's influence but the added sugars I guess have helped get more caramlization/browninghttps://groceries.asda.com/product/sausages-burger...

I've tried quite a few different burgers from Wagyu to M&S Ultimate but have found Morrisons own made burgers from the fresh butchers display to be the best flavour. They are normally 80p each but last week they were 40p. I asked the butcher if they were okay to freeze he said yes so I bought 20.
I press them out cold before cooking about twice their normal size then throw them on the BBQ, once one side has browned I turn it over and grind salt and pepper over it, flip it over and grind salt and pepper over it. I was told not to put salt and pepper on the uncooked burger, Morrisons also sell 4 decent sesame seed burger rolls for 70p.

For burger, local butchers (doesn't seem to matter which one) seems to beat all the supermarkets including the M&S ultimate
I think the burger loses something in the packaging process and they come out too firm and homogeneous. Maybe machine made?
For buns I find the St Pierre sesame seed ones the best, the M&S burger bunds are also good.
I find plain brioche too sweet for my tastes

I think that's why the Cosco regular and Morrisons butchers ones tend to be good as they use their in-house butchers. Costco hire professional butchers for that department, not train up regular staff (friend of mine who works at a Costco conformed this for me).
Not all butchers get it right though. There is a decent butchers not far from me, but last summer I tried his burgers a few times and he seemed to either be too heavy handed with the salt else not manage to mix the seasoning in properly. I actually had one burger where three quarters of it was bland and quarter had a heavy hit of pepper.

So far tried:
Side note - this coming Thursday Lidl will have in Deluxe Ultimate Beef Bone Marrow Burgers - will be interested to hear what these are like as I'll not be in a position to try them.
So far tried:
- M&S Best Yet - blandest, most tasteless yet
- M&S Chicken Katsu - smelled nice, tasted bland, lacking in spice. Think the packaging mentioned coconut in them - no coconut in Japanese curries (and Katsu is the chicken schnitzel). Also raw the burgers lacked strength and one almost fell apart when I put it on the BBQ.
- Heck Steak & Butter - had these last night and while you can tell the meat is of a high quality, they suffered the same problem as the M&S Best Yet - complete lack of seasoning and as a result a distinct lack of flavour. Certainly not worth the £4 for two burgers.
- Waitrose Summer 4 New York Beef Burgers - these were interesting as you could taste the gherkins in them, so won't be for everyone. Reasonable flavour, but not great.

The Tesco ultimate were my go to burger after Morrisons stopped doing their bone marrow enriched burgers. So far tried:

My local tesco stopped stocking these for months and replaced them with their "Proper burgers" pretty much identical package, I never realised until I come to eat one and thought it was rotten (it has mature chedder, onions, gherkin and jalapeño in) they are rank.
The Lidl bone marrow burgers normally get stocked from march.
I always stock up for BBQ season and revert to the Tesco ones when Lidl stop doing them.

Has anyone tried cooking the burger like normal, and then making the burger up in the bun (brioche preferably) and then wrapping it in foil and into the air frier (could use oven I guess) for a few minutes?
Makes the bun softer and the cheese go gooey, it's damn good. Game changer imo.

I'm confused. Tesco stopped stocking their 'Ultimate' burgers which were your 'go to' and replaced them with 'Ultimate burgers' which were rank but you stock up on them anyway? My local Tesco stopped stocking these for months and replaced them with their "ultimate burgers" <clip> they are rank.

My bad, I meant "proper" not ultimate. Jonnny said:
