Lots of great ideas here, thanks. I have ordered a load of sausages, burgers and chicken kebabs now from a local meat supplier.
Can't help but LOL at the fact everyone said avoid burgers and sausages*- for the record I'd be the same and still go for my usual of burgers and sausages

I was also considering getting the pizza oven out for anyone that is still standing when it gets dark, but I honestly think I'll be sick to the back teeth of cooking by then! (and hopefully quite merry)
Good luck mate. I hope you are good with heat control as that is the key to cooking fatty stuff. Personally, I would have gone another direction to avoid spending all day at the grill but each to their own.I was also considering getting the pizza oven out for anyone that is still standing when it gets dark, but I honestly think I'll be sick to the back teeth of cooking by then! Maybe sous vide the burgers / sausages and then just brown on the grill to order. ;-D

Sweet Jesus… those briskets look amazing.https://www.johndavidsons.com/pitmaster-bbq

My experience with my local butchers is that the flat point of the brisket is quite thin so it cooks too quickly which impacts the bark.
Those short ribs look great too.
