Lots of great ideas here, thanks. I have ordered a load of sausages, burgers and chicken kebabs now from a local meat supplier.

I was also considering getting the pizza oven out for anyone that is still standing when it gets dark, but I honestly think I'll be sick to the back teeth of cooking by then! (and hopefully quite merry)
Good luck mate. I hope you are good with heat control as that is the key to cooking fatty stuff. Personally, I would have gone another direction to avoid spending all day at the grill but each to their own.

Maybe sous vide the burgers / sausages and then just brown on the grill to order. ;-D

This might sound stupid, but it works really with high meat content sausages. Boil/Simmer the sausages to cook them through, then finish them on a hot BBQ. Juicy, tasty, quick and simple.

Sweet Jesus… those briskets look amazing.

My experience with my local butchers is that the flat point of the brisket is quite thin so it cooks too quickly which impacts the bark.

Those short ribs look great too.
