My pastry experiments start this weekend. I've got the tips from the pastry thread, plus Delia's recipe, plus my Mum's recipe which I got during the week.

Lots of jam tarts and apple pies for Podie and his workmates next week lol - if I find one I'm happy with, I'll let you know.

THB you have to make pasty on the day IMO. I few extra minutes is worth it. Sayig that, after it has been cooked is the time to put it in the freezer wih a decent filling and ready to be heated in the oven until warm. Chicken and leek pie for me this evening which I froze about 2 weeks ago ! The haddock I got from the market to try Don's recipe is now in the fridge.

A few of her other books --- 'A Christmas Collection' One Is Fun, Frugal Food, Book of Cakes,and A Journey into God [Never seen that one though]

One tip for pastry making (unless you are using a food processor) is to run your hands and wrists under the cold tap - you get better pastry if you have colder hands. That said, I'm no expert, and woudn't consider making anything other than shortcrust pastry (life's too short to make puff pastry!)

I watched a Jamie Oliver episode and he said the same thing about cold hands. He also said that puff pastry was too much effort and better to buy pre-made. He then cooked a great pie with the puff pastry

watched the new Delia series last night, and TBH I didn't think much to it.

Delia is a good cook and I normally enjoy her programmes, but she seemed to lack any interest or enthusiasm for what she was cooking.

She even said herself that she went without as a child as it was more important to eat well and enjoy your food and cooking, and I dont class eating frozen pre packed food laced with salt as eating well and she doesn't appear to enjoy cooking it either.

Saw this the other night and wasn't impressed.

I went off Delia years ago. I was looking for a recipe for a mustard based sauce for a fondue and found a recipe, in one of my mums £20 Christmas cook books, in the index for a mustard and horseradish sauce. Turned to the recipe to be told 'Get some mustard. Get some horseradish. Mix them together.' Erm - cheers Delia.

This weeks show seemed to be more about football and nuns than cooking. Does she really need the money this badly?

She really does annoy me but sometimes the recipes make up for it.

didnt get the football and nuns bit either, thought the programme was about cooking and food - hence I'm not really interested in football and nuns on a cooking programe.

Delia Smith sould be taken into the woods and shot.

her food is rubbish and that piss poor book on cheats is just an advert for aunt bessies crap.

It did surprise me that she used bought pastry and tinned onions (!) in her tart. So all she added was eggs and cheese?

Im not really a fan of Delia. My mum bought me her Cooking For One book but the list of ingedients was huge, not the size but just the number of ingedients.

The only thing I do like is her Roast Chicken with Red Onion, Thyme and Garlic which I make often
