It's the fishy equivalent of 'mechanically recovered meat' (google it). I know all this but am not deterred - I actually quite like them.
If you're ever in France check out the local brands such as 'Coraya' - they are a thousand times nicer than what's available in the UK and often have sachets of sauce included - the 'sauce ciboulette' is lovely.
