I'm doing wings for a party on Friday - any recommendations for not-too-spicy/offensive rub or sauce for my guests?

I'm thinking 30mins around 220 degrees, then 30 mins around 200 degrees, on the baking tray rather than the rack so they can roast in their own juices. Will this make them soggy or will my idea work? wobble

Will serve with blue cheese sauce and celery sticks.

An un named restaurant in Glasgow (Burger Meats Bun) has also recently opened in Edinburgh and do the best Seoul, Buffalo and Chinese Chicken Wings, deep fried, crispy and soft and you can strip the meat off the bone with your teeth, like they do in the cartoons.

Poach them in some stock (or even better, confit them in goose fat), then BBQ them until crispy and souse them in Frank's Buffalo Wing Sauce lick

I bought some wings from a local meat supplier. Very cheap. Just put them on my little kettle BBQ and brushed them with some sauce. Nice and crispy - not fatty at all. Made for a nice tasty dish.

I'll be getting some more when I visit the supplier again.

Buy a pack of raw, unseasoned wings. Often found dirt cheap. The wing needs to be cut into three pieces at the joints. Discard the wingtip - nothing on it anyway, IMO.

Toss the wing pieces in a very little groundnut oil and season very liberally with the Piri Piri and salt.

Put the wings on a rack above a baking tray and put in the oven at around 200C. I sometimes prick them with a skewer to help the fat run out.

OK. At this point you roast 'em. And keep roasting 'em. And keep roasting 'em. I reckon you could first check after half an hour - but you'll probably need to keep going for the best part of an hour. Keep roasting until well browned and "sticky"/crunchy on the outside. The fat should have run out so the meat inside should be dry-ish (still moist - those wings are VERY fatty) and the outside crunchy crisp and good.

In the summer the same effect is achieved on the BBQ.

Good luck. You may need to try a couple of times to achieve the effect you like best personally but it IS worth persevering. yes
A bit of a bump for this thread, but found this whilst I was looking for a recipe to use up the spare wings from the Christmas gravy.

This recipe was perfect, simple and made a good light dinner.

Bump

First time doing wings in my Actifry for lunch today. No extra oil just flour, chilli and salt doused in Franks hot sauce.

Just saw this thread and I didn't realise at first how old it was. I was going to say, Pferdestarke, do you remember the wings at that hotel in Miami? This thread must've started around about that time anyway. Bloody delicious, they were in both BBQ and Buffalo guises.

As it happens I've got some wings coming on tonight's grocery order. A dash of Psycho Juice in the marinade mellows a bit while they're in t'oven. Salivating now.
