There is a place in Manchester (didsbury) called Greens which is meant to be fairly highly rated. It is vegetarian but I am sure will have some vegan things on the menu or be able to adapt a dish if need be. Interestingly, the owner is not actually vegetarian, but wanted the challenge of creating tasty vege food.
There is another place in Liverpool called the Egg cafe, a hippy kind of place, which tbh was pretty poor imo. The food was bland and is the sort of thing which gets vege food labelled as dull and boring.
I spend 3 years in Liverpool and there isn't anywhere I can think of which would provide a great deal of vegan choice.
If Greens doesn't tempt you then I would probably head down to Rusholme for a curry, if you steer clear of kormas etc then most indian food doesn't have a dairy element, and is pretty vege friendly.

but if its living, that might make eating a bit of a problem, as even grass is living. so what can you eat? umm, water, and.....errr, thats about it.

dunno about liverpool but midday in Manc, grab lunch at the eighth day on oxford st - the Buddhist place (earth cafe - turner st) is good too - lunch only.
Rusholme isn't bad, look for the big veggie sections on the menu's then ask the waiters, if they're w@nkers, don't bother - but you will find a good vegan curry - remember to ask about the ghee, they can use a vegan option (which between you and me is just hydrogenated vegetable oil...), and some breads - but she's probably used to that...
Greens is great - also been to a couple of others, but forgot...
oh, Chaophraya - nice vegan choice, nice little venue...
Most places can russle up a plate of olives, hummus and breads/salad/ or pasta-oil-garlic and chilli, or whatever these days, disguise yourselves as coeliacs if you feel embarrassed..

By far and away the best ever veggie joint in the country is Terre-a-Terre in Brighton - I would urge everyone on here to go just once, just for the craic... it's magic... but nowhere near the NW...
