Being half jamaician, I can recommend jerk pork as well. Do the same as the chicken, however you may need to use a touch more oil to avoid it drying out too quickly.

Make sure the pieces aren't too thick and have a reasonable amount of fat... lick

Take a whole chicken and cut it open down the backbone and splay it out flat- 'butterflied'. Then rub whatever marinade you have created all over, tie the chicken back shut and put it in a plastic bag in the fridge for a day or so.

Then barbecue it, opened up and laid flat.

Works brilliantly.

Mmm, sounds good. Never seen that before.
