I'm not a fan of vegetables. Not without copious amounts of read meat and and buckets of sauce/gravy. So I've making healthy vegetable soups and stews (with small amounts of meat) to balance out my diet.

Long story short... to what degree does freezing and then microwaving destroy the goodness in our food, or is this a non issue?

AFAIK, freezing is fine, not sure about microwaving though, probably why it is called 'nuking'.

I always thought if foods were overcooked in water then the goodness leeched out. I would have though that as most things bunged in a microwave don't sit in water for 4 hours bubbling away then the likelihood of goodness leeching out would be minimised.

I'm not an expert on the radio spectrum though.

Not as good as eating them fresh, but better than not eating them at all. Fill your boots!
