Got a BBQ to go to this wk end and I pulled the salad straw - for 20 people.

Don't want to put any meat or fish in it as there is a bbq, canapes etc....

Just need a simple salad recipe. Thinking back to good salads i've had in restaurants the ingedients so far are'

Rocket and Cos
Shaved Parmesan
Pine Nuts
Sun blushed tomatoes
Olive Oil

What else to add to this ?

I'm a big Greek salad lover and regularly chuck the Feta in. Recently in America though I've been introduced to crumbled Gorgonzola in the salad and that is wonderful as well. Chopped Avocado works well too.

Microwave 4 rashers of streaky bacon for 4 mins, drain and leave to go cold.

It'll go very brittle and tastes great crumbled over salad.

If we each keep adding lone ingredients this salad will be disgusting!

I'm no fan of leaves, so I'll offer this bean-based salad instead. Asparagus is in season, too, so you should be able to get UK produce quite cheaply.

I had a BBQ last weekend and alway find Salads are an individual thing so provided the following,

Large Salad bowl of mixed leaves, rocket spinich etc

Large foil tray laid out with "additions"
Sliced Tomato / Sliced Peppers / Sliced Mozarrella / Sliced Onions with mint & Corriander / ribbons of cucumber (peeler) / grated carrot & cheddar

And had a couple of different dressing available

Do you guys only eat salad in the summer?

I personally never eat it, as I find that I am hungry ten minutes later and that the taste of leaves is not a good one, but it would seem that most people only make half decent salads in the summer..

I eat salad all year round.

In terms of it not being satisfying enough i address this by taking healthy salad leaves and adding a huge ammount of cheese, meat and dressings

Great stuff ! Good insiration ! I've had to omit any beans or lentils (urghh !) and mushy avocado or soft cheese. End shopping list is this - possibly with some olives if I can find some nice ones...

Grated Carrot

Drizzle of olive oil and seperate dressing available.

Caprese Salad.

Good quality Mozzarella and Beef tomatoes, drizzle with olive oil and a bit of torn basil.

Fresh, refreshing and looks good on a plate.

Do a couple of salads. Pasta salad with Pesto and Pine nuts with olive oil is another or pasta, feta and sunblush tomatoes.
