Easy satay sauce...

... for chicken and maybe other stuff.

This recipe is courtesy of HFW, actually out of the back of his 'Meat' book (AKA - the bible;))

I made it the other night for a snack/small meal as I got back late from karting and couldn't be bothered to faff about too much. Goes well with chicken and rice but only in small portions as its very rich, probably better as a starter or something really. Keeps for a week in the fridge apparently too.

1x onion, finely chopped
2x cloves of garlic, crushed
125g of crunchy peanut butter
3x tablespoons of dark soy sauce
1x tablespoon of dark sugar
1x lime, juice of
1x chilli, finely chopped
Sunflower or groundnut oil

Fry onion and garlic in oil till softened and starting to colour. Then basically chuck the rest of the stuff in, add a splash of water and heat through. I pan fried some diced chicken and stirred it into the sauce and had a small portion with a bit of rice. 'Twas good....

I'd been hankering after some satay sauce, and as you say, crunchy peanut butter is the key ingredient.
