I love a good steak and kidney pud and fancy having a go at making my own.

Does anyone know how to make the 'pudding' as I have no idea? Of course I can dig out a recipe or look online but I’d rather have a PH recommendation.

Oh, and while I am asking does anyone have any suggestions on how to make up the perfect filling?

For the pastry.

Half as much suet as flour and some tepid water.

Easy.

and for the filling, leave out the kidney. much better.

Not exactly Steak & Kidney then though is it.

The kidney adds just that perfect balance to teh flavour as long as it's not too strong or the ration of kidney to steak is off.

The secret to a good pudding: Newcastle Brown Ale.

I can post a recipe for a decadent steak and kidney pudding, but it takes a good 6-7 hours to steam.

Worth it though!
