1 Tin of anchovies in oil
couple cloves Garlic
1 chilli
4-5 tomatoes
a few frozen peas
Some mediteranian type herbs
100g pasta
chop anchovies garlic and chilli soften in the oli 5-10mins bung in the quartered toms and herbs fry 5 mins bung in peas another 5-10mis serve with pasta of choice (season + extra olive oil to taste dont bother skining tomatoes lifes too short)

Have you also tried http://www.sortedstudents.com ? There's loads of recipes on the website and there's also a book with loads of stuff in too!
sausage casserole!! one pot; sausages, veggies, can on chopped tomatoes, voila
very easy to make more than needed & freeze the rest too (while you're in your i'm a new student phase with loan money have a chinese or two & keep the plastic tubs for freezign meals in!!)
since coming out of uni i've found myself cooking risotto alot. very presentable & when you consider how little riotto rice you need to use it should be quite cost effective. also good for using random veggies etc up in & you don't have to be a pro & use parmesan i use mature cheddar & actually prefer it

You can make a surprisingly acceptable fish pie from a can of tuna, some white sauce, froz peas & mash.
Sunday roasts become surprisingly cheap if a few people are willing to chip-in. Leftovers make great shepherds/cottage pie etc.
Ability to make a decent tomato sauce is a must. So many dishes follow on from this.
