We shop online with Tesco, so we tend to plan each meal in advance, Monday to Friday (weekends we treat ourselves)

Warning, library pics hehe

Interested in what you all have during a normal week.....here's mine for this week a few from Ramsays fast food book as we have two kids to get to bed, we like quick and easy stuff, and go special at the weekends.

Monday
Beans on toast. For added flavour I stirred some Reggae Reggae Sauce into my beans and grated some cheese on top

Tuesday
Tagliatelle and smoked mackerel. (Changed pappardelle and trout)
Whizz some sun dried and plum tomatoes with garlic, lemon juice, shallots, oilive oil, salt, pepper for the sauce, throw over the pasta with the fish, warm through, job done.


Wednesday
Penne with goats cheese, runner beans, pepper, chilli and toasted pine nuts, easy stuff


Thursday
Fajitas. Cheating here, Old El Paso kit, chicken, peppers, onions, avacado and sour cream, I like my peppers and onions crisp, so don't cook them long at all.

Friday
Sausage and beans. Throw some tins of mixed beans in a slow cooker with the sausages, bit of fresh thyme and some olive oil. (Do this in the morning)
Buy a fresh crusty loaf on the way home and lob it in a bowl and dip your bread.

Good point.

I'm amazed how little we throw away these days with a planned week. People seem to think that just because you've a meal list stuck up on the wall its inflexible or you can't shrug and have a take-away if you fancy it.

Good point.

I've just priced up a few of my meals.

Pasta, Runner Beans & Goats Cheese
500g Penne 0.68
125g Goats Cheese 1.26
225g Runner Beans 1.50
50g Red Chillis 0.50
100g Pine Nuts 1.75
15g Fresh Rosemary 0.40
Garlick Clove 0.30

Assuming you have salt, pepper, butter and olive oil, that will set you back £6.39 and will comfortably feed 4 people, leftovers popped in tuppaware tubs and I have it for lunch today. I froze the runner beans and the remaining rosemary was for todays meal....>>>>

Spicy Beans & Sausages
454g Pork Sausages 2.59
400g Mixed Beans 0.74
400g Spicy Mixed Beans 0.74
400g Chopped Tomatoes 0.48
15g Fresh Rosemary 0.40

That's for two (fat boy night) £4.95 all lobbed in the slow cooker this morning yum

Beans On Toast
4 x 415g Baked Beans 2.18
Loaf of bread 1.28 (clearly you don't use the lot hehe)
250g Cheddar 1.84

£5.30 will feed the four of us.

Fajitas
580g Chicken Breasts 4.92
3 x Peppers 1.80
1 x Onion 0.16
Fajita Kit 2.85
1 x Avacado 0.51

Bit more expensive this one £10.24 for four.




So, to summarise, that's £26.88 for four nights worth of food. I always have beans on toast on a Monday as I play six-a-side and don't like anything to heavy.

I've just realised how tight I am laugh

I find the Old El Passo stuff a little too salty. This is the mix we use for fajitas.

1 tsp chilli powder
1 1/2 tsp cumin
1 tsp black pepper
3/4 tsp salt
1/2 tsp paprika
1/2 tsp dried oregano
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp crushed red pepper flakes (or pinch of cayenne)


Usually make our own Salsa to go with them too, tend to make it up as I go along though so don't have exact quantities
1 onion
1 1/2 - 2 bell peppers (different colours)
1 tin chopped tomatoes
pickled jalpenos
white vinegar (usually use the stuff from the jalpeno jar)
oregano
sugar
salt
crushed chillis

Ssoften the onion and peppers in the pan for a bit, then chuck in the rest and leave it to cook until it's thickened nicely. Best served chilled.

Sounds nice, however, we don't get home until 6pm so like to be able to throw it together in a few minutes, I may make my own one weekend because it's nice to make your own.

I tend to work on a daily basis from what I have lying about in the fridge/freezer and also from what I have pre frozen.

An average week usually consists of a curry, a chilli con carne, a spag bol, a pasta dish, pizza and salad, pie and chips and something meaty like burgers or sausage and mash.

Mon: Homemade burger and salad
Tue: Spaghetti Carbonara
Wed: Sausage & Mash
Thu: Leftover chilli
Fri: Treat
Sat: BBQ (all being well)
Sun: Mum & Dads for dinner
